Chilli non-Carne w’ Quinoa & Seasonal Slaw

STEP ONE - FROM YOUR FOOD BOX:
Chilli non-carne 1 pack
Quinoa 1 pack
Seasonal slaw 1 pack
Tahini dressing 50ml
SUGGESTED PANTRY STAPLES:

Coconut yoghurt

Fresh chopped coriander

Fresh sliced chilli

Sliced spring onion

STEP TWO - ITEMS YOU WILL NEED:
 

Microwavable dish with lid

 

Shallow saucepan with lid

 

Medium mixing bowl

 

Stirring spoon

 

Salt & pepper

 

Olive oil

MAKE THIS A BREKKIE/LUNCH OPTION:

Try wrapping the Chilli non-carne and seasonal slaw up in a wrap like a burrito for an on-the-go lunchtime meal.

Quinoa is just as delicious mixed into a cold salad or slaw with some cherry tomatoes, pomegranate seeds and feta.

STEP THREE - LET’S GET STARTED:
    1. Empty the Chilli non-carne into a saucepan and cover with the lid.
    2. Place the saucepan over a medium heat and gently bring to a simmer stirring occasionally for 8 – 10 minutes.
    3. Once hot, remove the saucepan from the heat and set aside until needed.
    4. Spoon the quinoa into the microwavable dish and cover.
    5. Place in the microwave on high for 2 minutes or until hot. (allow the quinoa to stand for 2 minutes before removing the cover as there may be some steam build-up)
    6. In a mixing bowl, dress the seasonal slaw with 50ml of the tahini dressing then transfer it to a serving dish.
    7. Spoon the hot quinoa into your bowl, top with some Chilli non- carne then add some seasonal slaw on the side for a bit of freshness and crunch and enjoy.

*If you don’t have a microwave, you can heat the quinoa by placing it in a steel sieve or steamer placed over a pot of boiling water. Cover with a lid and allow it to steam for 8 – 10 minutes. Just make sure the sieve or steamer doesn’t come into contact with the water at any point*
